I have jalapenos in my fridge and I really wanted to make something with them. So I did this.

Jalapeno Frittata Muffins
6 eggs
1/4 cup half and half
6 tsp grated Parmesan cheese
1/2 cup red and green bell peppers
1/8 cup onion
1/4 cup jalapenos
dash of salt and pepper

  1. Preheat oven to 400°.
  2. Mix ingredients - I mixed everything together in my Ninja to help chop up the peppers and froth the eggs and half and half.
  3. Grease a muffin tin - I used Pam, but butter would make them even yummier.
  4. Fill to 3/4 full.
  5. Bake for 15 - 20 minutes.

Optional: I added some shredded mozzarella on top of each muffin before baking.
